Wait a minute. Did I just sub-title this after my husband’s ex? Anyway, I am going to share my world-famous (at least in our house?) recipe for banana bread. ANYBODY can make this in 5 minutes of prep. It’s perfect for a quick weekend breakfast or lunch, Christmas treat for friends who don’t eat your chocolate goodies – although I’m unsure of why they are your friends if they don’t eat chocolate, or taking to your neighbor when they have a baby or are laid up with a paper cut.
Here’s my super lazy recipe:
1 & 1/2 cups baking mix – because using all the separate baking ingredients are for chumps. Oh, and people who actually bake 🙂
1 cup sugar
2 Eggs (or whites,if you want a lower fat version)
2 large or 3 medium ripened bananas
Cinnamon
Mix top 2 ingredients. Sift together if you feel like washing an extra dish. Mash up bananas with a fork (you know to peel first,right?), and add along with the eggs. Mix everything together. Sprinkle cinnamon so it is a thin layer on top. Mix in. Put in greased loaf pan and bake for 60 minutes at 350° .
That’s it! I usually double this for our family and bake in a regular 13×9 pan if planning ahead for Saturday breakfast, or if we didn’t eat as many bananas that week. Hope you enjoy!

I used to love preparing food, but now it just feels like another chore with not enough time to do it. This really is 5 minutes from preheat to in the oven! And a crowd pleaser!
