PAN BUCKEYES
If you like traditional buckeyes, these are even yummier! If you don’t like the hassle of making them, these are so much easier! If you know someone who doesn’t like peanut butter and chocolate, don’t trust them- that’s just weird! The holiday season usually calls for at least one occasion to bring a dish, right? Then there are all the people you want to give a little something to show appreciation, or friendship, or suck up to (Don’t be ashamed. It happens.) Make these, wrap them up pretty, and you will get that promotion! Your child will get that A! The guy who changed your oil last week that you think you accidentally offended will NOT cut your brake lines the next time you come in for service! Okay, maybe not everybody worries about stuff like that, but my point is, these are really, really good. As I mentioned in my Holiday Gift Ideas post, I’m sure blood has been shed over these pan buckeyes. I’ve been getting requests to make these for many years, and I never mind, because a batch is so simple to make in around 20 minutes.
I do want to give credit first, where due, to where I first happened upon this recipe. It was on a morning news program, and it’s the property (to the best of my knowledge) of Lee Ann Miller, owner or past owner, of Miller Haus Bed and Breakfast. I have made a couple of variations, which I will list after recipe.
2 Sticks Butter
1 & 1/2 Cups Peanut Butter
3 & 1/2 Cups Sifted Powdered Sugar (I highly recommend the sifting, but if you can’t, the recipe still works)
Topping:
1 Cup Milk Chocolate Chips
1/2 Cup Peanut Butter
On low heat, melt butter and first portion of peanut butter. Remove from heat and mix with powdered sugar. Pat into pan (she lists one a bit smaller, but I use my 13×9). The pan should be lined with wax paper, but in a pinch I’ve just very lightly buttered my glass pan. In a small saucepan, melt topping ingredients together on low. Pour over peanut butter mixture in pan and spread evenly. Chill to set before cutting. Package them up, get them to that workplace holiday lunch, and bring a shank – I’m telling you, people will fight over these!
For something just a little different, I’ve used dark chocolate or white chocolate chips. So good!
For a little healthier version, use natural peanut butter and pretend that’s good enough to not feel guilty.
100 calorie version : Put three creamy and delicious pieces on a plate. Have someone else eat them and grab a handful of pretzels.
